Wine is a living thing. It starts out young and brash, matures into something special and complex and then eventually dies. This cycle can happen in a year ... or in many decades. It all depends on two things - the wine itself - and the conditions it is stored in.
The enemies of wine are temperature variations and heat, light and vibrations. Wine likes to be stored in a constant cool temperature, in a dark place and away from vibrations.
Alessia will personally visit your cellar and map out any improvements or changes that should be made before beginning or continuing the storage of your wine patrimony.
She will do an inventory of your wines and divide them into areas, organizing the cellar and giving each wine a number so it will be easier to find and catalogue.
Alessia will also examine and provide a suitable time within which each wine you possess should be enjoyed. You will also be suggested a selection of wines to complement and round out your existing collection.
